Great as decoration on lemon drizzle cakes. And you can eat them!

  • A mandolin or very sharp knife

Ingredients

  • 1 x cup of caster sugar

  • 1x cup of water or lemon juice

  • 3 lemons sliced really thinly

  • 1/2 cup of caster sugar for rolling

Method

In a large saucepan combine the sugar and water. Bring to the boil over a medium heat.

Reduce to a simmer and place the sliced lemon in one layer into the pan. Simmer for 15 minutes turning the slices occasionally.

Transfer to a piece of silicone paper to cool.

Roll in caster sugar for a crystallised finish.
